Properties

Our food grade beta-Glucosidase is a versatile enzyme designed to support plant-based processing, release natural aromas, and improve sugar conversion. Acting on cellobiose and other suitable beta-glucosides, it releases glucose and complements the activity of cellulase enzymes, helping convert cellulose-derived breakdown products into fermentable sugars.

In fruit juices, wines, and plant-based beverages, beta-Glucosidase can release aromatic compounds from their bound forms, enhancing flavour and aroma where suitable precursors are present. It can also convert certain plant glycosides into their corresponding aglycones, supporting the development of specialised food ingredients.

Used alone or within a complementary enzyme blend, our beta-Glucosidase offers a targeted approach to processing plant-derived materials. Whether your goal is to develop richer flavour profiles, improve enzymatic hydrolysis, or make better use of your raw materials, it provides a flexible solution for food and beverage i

Reaction

Cellobiose + H2O → Glucose

Storage

12 months (see PDF for details) * Where 1 unit is the amount of enzyme required to produce 1 micromole of reducing sugars per minute from cellobiose under standard condition.
